Grilled Chicken & Avo Salad

Grilled Chicken & Avo Salad

Ingredients

  • 4 Irvine's Chicken breasts
  • 1⁄4 cup olive oil
  • 1⁄4 cup fresh lime juice
  • 1 tbsp ground cumin
  • 1⁄2 tsp sea salt
  • 1⁄2 tsp freshly ground black pepper
  • 4 Irvine's Chicken breasts
  • 2 avocados, cut into chunks
  • 200g cherry tomatoes, halved
  • 1 red onion, sliced
  • fresh basil
  • 1 tbsp sesame seeds, toasted

Instructions

  1. Combine the olive oil, lime, cumin, salt and pepper in a bowl and stir to combine. Add the chicken and marinate for 30-45 minutes at room temperature. Heat a grill to high heat. Lift the chicken from the marinade and grill, turning often, until no longer pink in the centre, 10 to 15 minutes. Let the chicken cool, then slice into strips. Combine the chicken, avocado, tomatoes, onion basil and sesame seeds. Serve as a salad or in a wrap.
